Water chestnut flour is widely used in India and commonly called Singhada Atta. It is similar to any other flour like wheat or rice but contains no gluten and has a good amount of starch. It is made from dried water chestnuts, and has a neutral, slightly nutty taste. It is very useful in cooling the body and is commonly preferred during religious fasts (vrat) to make crispy puris, thick halwas, and savory pancakes.
